For the Cornbread Poppers

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup melted butter
  • 1/4 cup honey
  • 2 eggs

Instructions

  1. Preheat oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the buttermilk, melted butter, honey, and eggs until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
  6. Bake for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  7. Let the cornbread poppers cool slightly before serving.

Notes

Extra Flavor & Serving Tips:

For a bit of extra flavor, you can add a pinch of cayenne pepper or finely chopped jalapeños to the batter.

These cornbread poppers are delicious served with extra honey or a dollop of butter on top.

If you don’t have a mini muffin tin, you can bake them in a regular muffin tin, but adjust the baking time.
